I am unsure if "All Faiths Day" is correct or if it should be "All Faiths' Day".
Depends on what you're trying to say-using the apostrophe indicates that the day belongs to all faith (singular, and probably not what you're getting at); using an apostrophe after the s would mean it's a day for all faiths, ie all faiths' day, though the apostrophe is often ignored in similar constructions like All Saints' Day JonRobins
